Tore has lived in the village of Herslev for almost 25 years. He chose to settle here because he believed it was the most beautiful place one could live – and he still does. Today he lives and breathes for his organic farmhouse brewery.

Tore is the founder and owner of Herslev Bryghus. He loves the little village of Herslev because, to him, nature and culture come together perfectly here. His farm and brewery are surrounded by the very fields where the barley for his beer is grown, and only 600 metres away lies Herslev Beach with its small marina and wooden bathing jetty.

What would you recommend people to experience in Fjordlandet?

I’d suggest walking to the end of the bathing jetty at Herslev Beach. When you stand there, looking out across the fjord, you can’t help but reflect on why anyone feels the need to travel far away.

Depending on the weather, you’ll have very different experiences – perhaps a calm summer evening when you can feel the warmth of the wooden jetty and enjoy the still water, or a winter’s day with wind, waves, and a sense of raw nature.

It’s a place that puts things into perspective – truly wonderful to stand there.

That sounds like a very personal local spot. Do you have any other places you’d recommend?

Yes – at the top of the hill on Kattingevej, when you drive from Herslev towards Boserup Forest, there’s a field with the most breathtaking view. From there you can see Bognæs, Roskilde Fjord, Roskilde Cathedral, the whole city of Roskilde, the waste-to-energy tower, and the Lejre Valley. It’s a spot I visit often myself.

When you have guests, is there a place you always take them?

Yes, Ledreborg Allé is a very beautiful and special place – a real must-see, in my opinion.

Otherwise, since my work takes up much of my time, I usually show guests around the brewery. When the cattle are out grazing in the fields, I always bring visitors to see them.

It’s usually quite an experience, as many people today have lost their connection to farming. Cattle are impressive animals – large, calm, and powerful – and meeting them up close always makes an impact.

So yes, I’m happy to take guests out into the fields to meet the herd.
